Tasty Tuesdays | Sweet Potato Tater Tots

Oh, sweet, sweet potato. Your recipe limits are endless. You're like a regular potato, but sweet. You're also softer, more satisfying and even better for me. Until I fry you up into crispy, gooey goodness and gobble you up faster than you can say "Turkey." I got the idea to try this recipe after eating maple-glazed sweet potato tater tots at The Federal Bar in North Hollywood and not being able to stop popping them in my mouth one after another. You might have seen proof of that on my Instagram. They were so tasty, I vowed to try my own twist on this new favorite. I omitted the maple glaze, because I wasn't sure how the chef dressed the sweet potato. I didn't want to end up with a soggy tot (yea, I said it), so I grated my spuds, formed them into rectangular logs and fried them up like normal. I paired them with a creamy maple syrup Dijon mustard dipping sauce that took the earthy and savory flavor of the sweet potato tots there. Ingredients:
> 2 small sweet potatoes
> 1/4 cup all purpose flour
> 1 clove garlic, crushed
> Salt and pepper to taste
> Vegetable oil 

Peel each sweet potato and grate as you see convenient. Some use a food processor and pulse about 10-15 seconds to get small bits. I chopped up my sweet potatoes and used a traditional grater to reduce my clean-up time. Combine grated sweet potato with flour, garlic and salt and pepper. Form mixture into tot-size logs and line on a clean plate. Heat 1/4 inches of vegetable oil on medium-high. When hot, drop tots into oil and fry for 3-4 minutes on each side. Remove and place on paper towel-lined plate. Enjoy warm!

  2. I might have to try this one, Gareen! Looks tasty and simple. I was concerned that they would fall apart in the fryer, considering the ingredients, but yours help up nicely. Good stuff!
