Thursty Thursdays - Watermelon Mojito


This is what happens when you take food photos at night. They suck. For that, I apologize. What I don't apologize for, however, is boozing and binging on a Wednesday night after a less-than-productive week. The binging is in honor of the yummy Easter cookies my gracious mother has baked to ring in one of my favorite holidays. The boozing is in honor of my impending Palm Springs road trip! If you're a frequent LPG reader, you are far too familiar with my wanderlust, especially when it comes to the desert. I can't wait to spend this weekend sunning and sipping with my nearest and dearest. I hope to whip up some juicy cocktails with which to imbibe while I sit poolside. How will you spend your holiday weekend?

Watermelon Mojito
Yield: 1 cocktail

> 2 oz. rum (I used Bacardi)
> 1 oz. fresh lime juice
> 1 oz. simple syrup (One part granulated sugar, one part water. Bring to a boil. Let cool before adding)
> 6-8 mint leaves
> 3 1/2 oz. watermelon flesh, cubed

Muddle watermelon and mint in a cocktail shaker or mixing glass. Add rum, lime juice, and simple syrup and shake well with ice. Pour (without straining) into a double rocks glass.
